You Will Need:

In a medium bowl, beat 2 eggs with a fork until blended

Allow batter to thicken for 3 to 4 minutes. Stir

Drop tablespoons of batter into 1/8" hot vegetable oil in a large skillet and brown on both sides.
Serve them plain, or with sour cream, applesauce, syrup or jam.
Makes: about 7 servings (18-24 potato pancakes)
