To Convert Non-GF Bread Recipes
Increase the water/milk in regular recipe by?half (if a recipe calls for 2 C. of liquid, use 3). Dough will have the consistency of cookie dough. Beat for 3 to 4 minutes on high speed of heavy duty stand mixer or 8 to 10 minutes by hand, instead of kneading. Omit first rise and punching down step in recipe. If making shaped bread, turn onto floured surface and roll all surfaces of dough in flour to remove stickiness. Do not knead extra flour into dough - the interior will be sticky - and shape bread. If making loaf bread, place into pans immediately. Let rise only once. Bake as directed.

Helpful Hints: For most regular recipes, omit "resting" or "chilling" step. For homemade pancakes and waffles, be sure griddle is ready before mixing together wet and dry ingredients - some (1/3) reduction in baking powder may be beneficial for pancakes and waffle recipes calling for more than 2 tsp. of baking powder.
