In a medium bowl, soak Kamut Flakes in milk for 10 minutes. Add egg, honey, vanilla, and oil and mix well. In a large bowl, combine dry ingredients. Add liquid ingredients to dry ingredients and gently mix just until moistened. Spoon one heaping tablespoon of batter into lightly oiled muffin cups. Then, place 1 teaspoon each of the peanut butter and fruit preserves on top of the muffin mixture, and cover with additional muffin batter until cups are 3/4 full (approximately one more heaping tablespoon). Bake for 15-20 minutes or until done.
